This past Sunday was Super Bowl Sunday, a football celebration, and a day of greasy chips, dips, fried foods and pizza. A day crammed with sausage, cheese, nachos and bacon anything, I had to come up with a recipe that was whole, tasty and hearty too. I did not want to be leaving the party with a four pound weight gain and I knew I needed something to satisfy a group of hungry men. No wimpy salad would work today. I would make savory cornbread instead. I quickly located several recipes online, mentally mixed them in my mind (don't try this at home), changed a few ingredients and ended up with a delicious cheesy treat.</span></span><br />

This made it a little drier and a little heartier, but Organic Valley Cultured Pasture Butter made it all better. I used a raw, organic cheddar cheese ( from grass-fed cows) and one jalapeño pepper. I probably should have used two peppers, because when they cook, a lot of the kick disappears. I only show one pepper in the recipe, but feel free to adjust. Diced red or green bell pepper or onions would be great in this recipe too.</span></span><br />

Cast iron makes great cookware not only because it is durable, it also adds iron to your diet, and browns meats perfectly. It holds heat very well too. A cast iron skillet your grandmother owned, can be used by your grandchildren if it is well cared for. A cast iron griddle can be laid across two stove burners and makes fantastic pancakes, burgers, grilled cheese and tuna melts.</span></span><br />

If the pan is smoking, your fire is too hot. Cast iron needs to be seasoned every now and then depending on how often you use it, I usually season about once or twice per year. Just take a little bit of oil or lard and rub a thin layer all over the pan, inside and out. Place the pan in the oven at 350 degrees and bake for about thirty minutes. Cool and repeat. I try to do my skillets, Dutch oven, and griddle all at the same time. If food sticks, to the pan, reseason until it is lustrous.</span></span><br />

Put one teaspoon coconut into 10-inch cast iron skillet and put into oven while it is heating. Mix first four ingredients. Cut in coconut oil until crumbly. Stir in cheese and jalapeño. Beat egg in small bowl, then add milk and honey/maple syrup. Add to dry mixture and mix until wet with big lumps gone. Do not over mix! Let sit for 5 mins. This will let the baking soda start working so it will rise better.</span></span><br />

First of all you add crunch. You can use whatever fresh veggies are on hand. In this recipe, I used green bell pepper, celery, and carrots to this recipe. Radish, raw turnips, or any other crunchy raw vegetable will work, as long as it is tasty raw.</span></span><br />

I finally found pickles without dyes or preservatives at an international market, however these little green crunchies came in a can. I had never seen canned pickles, and since it is impossible to see through the can to look before I bought, it took me quite a while until I became brave enough to try them. For Southern California, that is an awful lot. It was pretty cold too, I know 40 degrees is not cold to some of my readers but it sure made it easy to break out the stock I made. I keep my stock frozen in quart-size freezer bags which are clearly labeled and dated. Soup is so good for you and stock is the perfect base for easy soup. It is a great way to clean out the fridge as well. First I heated my stock. Then I chopped the veggies I found in the refrigerator which needed to be eaten. I found celery, carrot, potato, and onion. I quickly diced it into small pieces which were close to the same size. This will keep them all cooked at the same time. Put the celery, carrot and onion in the broth and simmered for about 30 mins so the flavors would enter the soup.</span></span><br />

Add apple cider vinegar let sit for one or two hours. Take meaty bones and bake at 350 degrees until brown. Add this to stock pot that has been sitting. Make sure you include all of the drippings. Add all veggies at this time. Add filtered water to almost the top of the pot. (leave at least one inch). Bring to a boil. A whole lot of scum will rise to the top. Skim it off and discard. When the scum is all gone, reduce to a simmer, the lowest heat possible. Add thyme bundle. Cover and simmer for up to 48 hours, the longer you cook, the better it is for you. When done, let it cool a bit and take out the bones. Strain it, to remove rest of bone bits and veggies. Place in refrigerator of 20 minutes to one hour. Fat will rise to the top and you can scrape it off and discard. Use immediately or ladle into labeled quart-sized freezer bags for future use. </span></span><span style="font-size: x-large;"><span style="font-family: Georgia, 'Times New Roman', serif;"><o:p></o:p></span></span></span><br />

Here, a slightly healthier, fare was found . We feasted on fruit, cheese, and Naked Juice. I even found a granola bar made of organic sprouted seeds, sweetened with agave nectar for the trip home. We topped it off with hot peppermint tea. Yum! They also offered salads that looked good, but we did not try.</span><br />

Basically the way it works is you either lease a full garden 240 sq ft ( $299) or half garden 120 sq ft ($199) for one year. You tell them what to plant and they plant the seeds, water, weed and harvest your produce. Then ship it to you or deliver to a nearby place where you can pick it up. There are garden maintenance fees of $50-$100, however you get that much credit in their store to by other organic or health related goods such as honey, soups, etc. You can sell your extra produce in their farmer's market which will cover the cost of your shipping. It has always been tough for me to find food that I enjoy eating that is healthy too. This year at Thanksgiving, I struggled to find recipes for traditional foods that were on our eating program. ( Basically we follow the Maker's Diet with all non processed organic foods and grass fed meats and dairy with no hormones or antibiotics). Thus I created my Cranberry Orange Relish. So many people asked for my recipes that I decided to create a whole website, blog, and cookbook to help others who search for the same good foods. <br />

<a href="http://picasa.google.com/blogger/" target="ext"></a>Salty, crispy, greasy, goodness. Delicious flavor oozing on my tongue. Since I no longer eat pork ( or any other scavenger animal for that matter) Salmon is my new bacon. I love to cook it in Coconut Oil with a little bit of kosher rock salt in a cast iron skillet. The cast iron skillet will add iron to your diet and both salmon and coconut oil are full of <a href="http://en.wikipedia.org/wiki/Omega-3_fatty_acid#Health_benefits">Omega 3 fatty acids</a> with excellent health benefits such as cancer prevention, immune function, brain health as well as cardiovascular health.<br />

Wild-Caught Salmon is the best you can eat. If your fish is farm raised, dye has been injected to give it that orange- pink hue. It has also been pumped full of antibiotics and hormones, the last thing you want to put into your body. The skin should be shiny. This is where all the flavor is. Slide it skin side down in a bit of coconut oil and sprinkle with kosher rock salt. Cover pan, cook for about 5 min on each side depending on how thick the fish is. Take off the lid and finish cooking. Great with a squeeze of lemon and a side of green beans.<br />

I am roasting itat 325 degrees for a couple of hours. When the juices start to drip I will slice potatoes and turnips and let them roast in the juices. The potatoes are organic, the turnips not. <br />

I will only eat organic potatoes after I learned that regular potatoes are sprayed 5 times with chemicals to keep them from sprouting. Also any pestisides in the earth can leech into them. I suspect that any root vegetables have this problem, but spraying to prevent growth is mostly for potatoes. <br />

I can smell the roasting garlic as the meat cooks. Here is a picture of the lamb roasting in the oven. I have sliced organic potatoes and turnip cubes drizzled in olive oil roasting along side. The meat drippings give so much flavor to the vegetables. This is a fantastic meal to start off the New Year. Okay, actually my wonderful husband Trey looked cranberries up for me on Wikipedia. This tiny sour red fruit is loaded with vitamin C, phosphorous and polyphenol antioxidants which benefit the immune system, the cardiovascular system and are cancer fighters to boot. They even help fight gingivitis and urinary tract infections. Good stuff to know, good stuff to put into your body.<br />

</div><div style="text-align: left;">I can make my cranberry orange relish on a regular basis because I buy cranberries when they are in the store during the Thanksgiving/Christmas season. I freeze them right in the bag and then cook them frozen. I make my relish with no artificial sweeteners or processed sugars; instead I sweeten it with fruit and honey.<br />

</div><div style="text-align: left;">1 bag cranberries<br />
</div><div style="text-align: left;">1/2 cup to 1 cup wild raw honey<br />
</div><div style="text-align: left;">2 oranges peeled, seeded and diced<br />
</div><div style="text-align: left;">10 dates, pitted<br />
</div><div style="text-align: left;">1 cup strawberries, fresh or frozen<br />
</div><div style="text-align: left;">2 cups Water<br />
</div><div style="text-align: left;">1 teaspoon cinnamon<br />

</div><div style="text-align: left;"> Put cranberries in large pot with water and bring to a boil. Put dates into food processor and puree. Add to cranberries. Do the same for oranges and strawberries. Add honey. 1/2 cup to start, more if you need it, depending on the sweetness of the oranges and strawberries. Stir occasionally. Add Cinnamon and turn heat to low and bubble until the cranberries have all popped open. When relish is of desired consistency, chill. This will keep for several weeks in your refrigerator.<br />

I have slipped so much since Christmas. I ate cookies, pumpkin pie and so much more. This new year is a return to the earth, a return to what my body craves, a return to what people ate thousands of years ago. Away with processed foods!<br />

Today in celebration of the New Year, I am making roasted leg of lamb. I have a 7 lb bone- in New Zealand leg of lamb. New Zealand lamb is the best with no hormones or antibiotics. Australian lamb is second best and American lamb is my last choice. It might be fresh, but it is more fatty and not as flavorful.<br />

Last night I made a paste of:<br />

5 sprigs of fresh rosemary, chopped<br />
3 bunches of fresh mint, chopped<br />
2 heads of garlic, chopped<br />
2 cups of dried mint leaves<br />
1 cup of olive oil<br />
juice from one large lime<br />
<br />
I rubbed the lamb with 1/2 cup of kosher Rock salt and then smeared the paste all over. I covered it and let it sit in the fridge overnight. I will post pictures as I cook it!<br />

When we did cook, it was usually spaghetti and garlic bread, tacos or burgers, the greasier the better. Breakfast was Aunt Jemima french toast and sausage sandwiches or eggs, bacon, fried potatoes and a big glass of milk. My feet hurt to stand for long periods of time and I weighed 267 lbs. I had tried many diets but always had cravings and felt woozy if I did not eat all the time. I knew if I did not do something soon, I was going to die.
